I’ve been experimenting this week with healthy versions of delicious treats, and these brownies are a knock-out. Vanilla greek yogurt adds protein but no fat, and gives the brownies a dense, rich texture.
3/4 cup unsweetened cocoa powder
1 1/4 cups wheat flour
2 cups granulated sugar
1/4 tsp salt
1 egg + 1 egg white
2 tsps vanilla extract
3 tbs unsalted butter
7 oz non-fat vanilla Greek yogurt
Preheat oven to 350 degrees. Grease 8×8 baking pan. Combine cocoa, flour, sugar and salt. Lightly beat the egg and egg white in a separate bowl. Pour beaten eggs and vanilla into center of dry ingredients. Mix until combined.
Melt the butter and add to mixture. Add yogurt and blend into a thick batter. Spread into pan. Bake for 55 minutes, or until sides pull away from pan. Let cool. Cut into 16 squares and enjoy!
